The region was invaded and occupied over the centuries by the Phoenicians, Greeks, the Messapians, by Rome, the Goths, the Lombards,
the Normans, and the House of Anjou. In the 15th century the Salento fell into the hands of the Spanish who used it as the last line of defence
against the Saracen and the Turkish expansion. The Bourbons succeeded the Spanish in the 17th century, building new roads, developing and
strengthening the ports, and bringing to the region an era of freedom and progress. But it was only in 1860 that the Unification of Italy finally put
an end to foreign occupation that had lasted more than 2,000 years.
The passing of the seasons is marked by numerous ‘sagre’, festivals celebrating the harvests and all the tastes and flavours special to the
